The 700 MOTHERFUCKING DEGREE GRILL…..let the primo roll with full open vents and forgot it…came out later and it was 700 degrees/ red hot to the max. I got very exciting of the thought of placing meat on those grates but for some reason I closed down the vents to about half thinking if it went down even to 500 the sear would still be beyond cool and good, but, forgot I had done that too, and it went down to 350 but by that time we wanted to eat so I checked the coals (still red) and made the decision to go on with placement. The meat was good but I knew and know it didn’t compare to what it COULD have been seared on a 700 degree grate. Next time I will leave them WFO.
