Pancetta Wrapped Pumpkin

This pumpkin dish can be served either as an appetizer or a side dish. If you’re not a fan of pancetta or don’t happen to have it on hand, you can use bacon.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 pumpkin, skin removed, seeded, and cut into 1 inch thich wedges
  • 8 slices pancetta
  • ¼ cup olive oil
  • 1/3 cup balsamic vinegar
  • salt
  • black pepper

Preparation:

Preheat grill for medium to medium- low heat. Brush pumpkin pieces with olive oil. Season with salt and pepper. Wrap with pancetta and place onto grill. Cook for 13-15 minutes, turning occasionally. When pumpkin is tender and pancetta is crisp, remove from heat and drizzle with balsamic vinegar before serving.
